Mexican food has a far reaching and diverse history. The foundations of what most people today recognize as ‘Mexican’ food has been around for centuries, however, the cuisine received a shot in the arm when the Spaniards arrived and conquered Mexico. They brought with them many new methods of preparation and storage, plus new food combinations and many exotic spices for further flavoring. Over time, Mexican food was discovered by other cultures and regions and eventually spread to all four corners of the world.
Over time, Mexican food became more domesticated and was altered to appeal more to non-Mexican tastes and sensibilities. Much of what is considered “Mexican” is actually closer to the Americanized version of Mexican food, in that it is generally bought at a fast food location and is not especially spicy or flavorful. So what exactly is “authentic” Mexican food then? For starters, even in Mexico – think Cancun and other tourist destinations – a trip to a Mexican restaurant will yield food that is surprisingly similar to what can be consumed in the US and elsewhere. While it is considered a rule of thumb not to eat at establishments that are not tourist-endorsed while visiting, the truth is these are the locations where you can experience the most authentic food in Mexico.
Authentic fare usually isn’t served in huge portions (*that is meant to cater more to tourists) and goes way beyond the reach of the usual burritos-tacos-enchiladas fare. Much Mexican food utilizes fruit and vegetables, doesn’t rely on layers of cheese or beans or rice and often seafood is offered or incorporated. There is more diversity in terms of preparation and meats also; pork and chicken are commonly employed more than beef and many other parts of the animal are consumed also, such as tripe. Other traditional ingredients include goat, sweet peppers and cocoa.
The thing to remember when seeking out authentic cuisine (*of any type, not strictly Mexican) is to keep an open mind; you’re seeking out something off the beaten path and as such what you discover may seem, look, smell and taste very foreign to you initially.
